Two Step Temperature Mash, Full Bodied Beer

Grain Temperature: 72°F Tun Temperature: 72°F

Mash with a direct heat source to maintain temperature.

Steps

Add 100% of mash water at 128° F / 53° C

2 Saccharification Temperature 30 min. 158°F

Heat to 158° F / 70° C over 15 minutes

3 Mash Out Temperature 10 min. 168°F

Heat to 168° F / 75° C for at least 10 minutes

Procedure

Mashed grains at 152 for 1 hour sparged with 170 degree water.  I think we needed to do a protien rest at 122 for 30 minutes.  Our efficiency was off mark. 

Special Procedures

14 gal of strike water. Sparge with 17 gal gave us 24 pre boil.  Lost 2 gal to boil for final of 22 to ferment, less the waste in tubes and kettles.

the hops: Simcoe and Amarillo were split evenly for 8 additions. the Warriors were split in 1/2.  Additions were made every 10 minutes from the start with the warriors added at the beginning and at 60 min left in boil.
